One evening last week, the mothers and daughters from our small group got together to celebrate the upcoming arrival of the baby of our friend Rivers. This family has been such a blessing to our group so we ladies wanted to celebrate with Rivers and her two sweet girls. We planned a meal of salads, followed by a few desserts: Italian cream cake, raspberry white chocolate almond bars, brownies, and coffee. This Italian cream cake is my most requested cake by my family or when I'm asked to bring a dessert to a special occasion. It suits any holiday or celebration any time of the year! It's unique from most other Italian cream cakes in that it doesn't call for pecans or coconut, so ... Read more
Flourless Chocolate Cake with Chocolate Ganache
Mother's Day is coming up and there's not a more decadent dessert for pampering mom with than a flourless chocolate cake smothered with chocolate ganache! Last month, yours truly had a birthday. My husband and kids took me to a favorite local restaurant for a delicious dinner of shrimp and grits, and then back home for dessert and a movie. That afternoon, my sweet baker girl offered to make a birthday dessert of my choosing. She's the best! At the time, I was on week six of avoiding sugar, so, needless to say, I was more than ready to indulge in a rich, chocolately treat for my special day. This cake has always been one of my favorites when it comes to splurging! Since there was a ... Read more
Red Velvet Pound Cake with Cream Cheese Filling
Valentine’s Day is quickly approaching so I thought today would be a good time to share a lovely red recipe. Red Velvet Pound Cake combines two Southern classics--red velvet cake and pound cake--into one sweetheart of a dessert! I shared this recipe several years ago on my old blogsite, but I think it is definitely worth repeating. And I can’t remember exactly where this recipe originally came from, but I’m guessing Paula Deen...maybe. Red Velvet Pound Cake Cake ingredients: 1 1/2 cups unsalted butter, softened 3 cups sugar 5 large eggs 1 tsp. distilled white vinegar 1 tsp. vanilla extract 3 cups all-purpose flour 1/3 cup unsweetened cocoa powder 1/2 ... Christmas Morning Coffee Cakes
I love a good coffee cake, but I must admit that my first experiences with this baked treat weren’t too impressive. First of all, I questioned the audacity of a recipe to call anything that was not topped with icing a "cake"! Ha! Secondly, they just seemed a little blah. Until.... I became a COFFEE DRINKER! I clearly remember my first piece of coffee cake with a cup of coffee. My goodness, it was so good! And then it became clear that my problem with coffee cakes hadn't really been the coffee cakes themselves. My problem with coffee cakes was that they were truly meant to be eaten while sipping a cup of steaming coffee. The two compliment each other, and together they are a delight! ... Read more
Snickerdoodle Pie and Pumpkin Ice Cream
I wrote this post last fall but didn't get it worked into my posting schedule. Hopefully I'm not too late for this year either. At my house, we are still very much enjoying the flavors of fall and I'm trying to squeeze in every last fall recipe and tradition before Thanksgiving. But, now that I think about it, I make this dessert all through the winter too! Snickerdoodle Pie is like a extra thick, extra soft snickerdoodle cookie baked in a pie shell and it's sooo delicious. Add a scoop of pumpkin ice cream and it's over-the-top good!! Snickerdoodle Pie (I do not even remember where this recipe came from. I searched the internet to find the original source but only found other ... Read more
Applesauce Granita with Maple Yogurt
Hello, friends! It's September and that means APPLES!! I adore apples. Their sweetness, their colors, and their announcement of autumn's arrival all delight my soul! On my old blog, I used to host an Apple Week each September when I would post a new apple recipe each day for 5 days. So today I'm bringing back Apple Week, starting with the easiest (and probably the healthiest) apple recipe I've ever made! Last week I was looking for a dessert that needed to meet three requirements: 1) fall flavors 2) healthy 3) refreshing (because it's still so hot outside!). I looked through my recipes and found this granita that covered the criteria. The crazy thing is that I've had this recipe in my ... Read more
One Week. Six Meals.
I love menu-planning! But sometimes I get into ruts and find it helpful to look at menus posted on other blogs and Instagram. Seeing what other women are cooking really inspires and motivates me to get in the kitchen. Last month I participated in the 31-day "Happy Homemaker Challenge" on Instagram, hosted by Whitney at Come Home for Comfort, and one of the photo prompts was called "On the Menu". So after posting my menu for the week, I thought I might as well snap a photo of each night's meal and post them here. Our weeks are pretty busy, but I still want to put healthy meals on the table. These are a few of my easy go-to's for quick, healthy weeknight meals. Monday~ Greek turkey ... Read more
Summer Farewell Tea
It seems so hard to believe that summer break is drawing to a close. My kids and I have been trying to get in all the last bits of summer fun with individual groups of our friends and family before school schedules start. We make a point to get together with my niece and sister-in-law, and another mother/daughter duo a few times a year to enjoy artsy teas, outings, and lessons for the purpose of indulging our inner hopeless romantics, haha. Realizing we'd not yet managed to work in a summer activity with them, we quickly pulled together a back-to-school tea. We all homeschool (except for my oldest daughter who is in college), and both my niece and our friend are beginning their senior ... Read more
