Tropical Fruit Salad with Honey Ginger Syrup

I don’t know about you but I just can’t get enough fruit in the summer! I buy so much fresh fruit every week and we gobble it up. We eat it all year long but love the summer’s seasonal fruits the most.

Fruit is delicious enough without having to do anything fancy with it–I usually just wash and eat it on the spot–but occasionally I like to make it into a salad, tossed in a lite and healthy syrup. Today I’m sharing one of my favorite ways to do that!

Tropical Fruit Salad with Honey Ginger Syrup

(This makes a huge fruit salad for a crowd. If you want to cut the recipe in half, you can still use the whole pineapple.)

Ingredients:

1 fresh pineapple, peeled and cut up

4 Gala apples, chopped (skin on)

4 mangos, peeled and chopped

4 navel oranges, peeled and sectioned

1 bag of green grapes, washed and pulled off stems

10-12 kiwi, peeled and sliced

1/2 cup lemon juice, freshly squeezed or bottled

4 Tbsp. honey

2-4 tsp. grated ginger (I like 4 tsp, but I use less for guests)

10-12 mint leaves

Toss all of the cut up fruit in a large bowl. In a small bowl, whisk the lemon juice, honey, ginger, and mint. Pour the syrup over the fruit and gently toss until coated. Pour into a serving bowl and top with more mint for a little more color and a pretty garnish.

Note: I prefer to grate my ginger, but I do keep ginger paste on hand for when I’m in a pinch and don’t have ginger root.

I love the fruit combination in this salad, and the lite syrup is just so good! The honey adds some sweetness to the ginger without being too sweet. The lemon juice not only gives a nice burst of citrus to the syrup, but also helps to keep the apple pieces from turning brown. And the mint–ahhhh, I love mint–gives the salad that last extra bump up!

If I’m taking this fruit salad (or any salad) somewhere, I use my Pioneer Woman bowl with lid. The one below is the largest in a set of 3 that I got at Walmart a couple of years ago for about $12 or $14, and it has been a great set! They’re cute and have clear lids so the colorful salad can be seen before it’s even opened.

My girl and I are off to Birmingham today. My dad had another surgery at UAB hospital yesterday so we’re going to visit my parents for the day and hopefully take my mom to lunch. Wishing I had a small bowl of this tropical fruit salad to take!
