Hello, my friends! I’ve been a little MIA lately with spring break, home projects, and spending some very precious time with our adopted grandmother who is in her last days on this earth. She is such a dear soul and I’d appreciate prayers on her behalf. Thank you!!
I wanted to jump in here for a minute today and just share a few of the many blessings God has brought the last couple of weeks.
First of all, we enjoyed a delightful spring lunch at my mom’s house the week of spring break! Look at her beautiful spring table!! My friends are probably all chuckling to themselves right now, seeing how I come by my love for decorating a table honestly. Yep, it’s from my mom! But hers are much better!
She served us the most delicious spring lunch of chicken casserole, rice casserole, carrots, green beans, salad, and rolls. And for dessert, a scrumptious lemony, creamy dream on a plate! I enjoyed mine with a cup of lemon ginger tea!
There’s been a lot of cooking and baking going on at our house lately. And if you thought I was the only cook at our house, you’re wrong! My husband is an awesome cook and surprised me one night with this amazing meal! Oh my goodness, it was so GOOD!!
Country Girl tried a new cake recipe called Italian Love Cake. Wow, it was delightful! I had three big pieces over that weekend! I think it’s my new fave.
For St. Patrick’s Day breakfast, Piano Girl made us all chocolate mint chip scones! We girls had taken a scone baking class and she was eager to put her new skill to use. They were heavenly!
And since St. Patrick’s Day fell on a Sunday, and that’s our big indulgence meal of the week, we enjoyed a traditional Irish lunch of corned beef, cabbage, red potatoes, carrots, and Irish soda bread. I wasn’t planning on decorating a table just for St. Patty’s Day, but threw a few green things on the table last minute, including arrangements of clover that Country Girl picked at the barn the day before.
For dessert I tried a new recipe for Irish Apple Cake with Custard Sauce. It was definitely different than my other apple cake recipes, but we loved it! It’s pictured below with Country Gir’s barn clover!
And speaking of St. Patty’s Day and clover, I found this adorable shamrock plant at Publix and it has been such a happy little thing to have around!
Last weekend the girls and I attended my niece’s Sweet Sixteen Birthday!! My niece is a real sweetheart and we were so happy to be a part of her special milestone. Her mother, my SIL, throws great parties for her kiddos, and this one was a Paris theme! She served a meal that was “tres bien”, followed by an array of tasty French finger deserts. We came home so full!
The tables all had a French theme. So elegant and fun!!
We had our house painted last week, and it was long overdo. It wasn’t the most ideal time to have the house turned upside down, but is there ever really a good time? I’m still putting things back together so hopefully I’ll have it done by the weekend, but here’s a little sneak peek of the paint color. Not a great photo though.
The kids and I spent a lot of time outside to stay out of the painters way. The porch had been covered in pollen, so I took the opportunity to pull everything out into the sun and give it all a good hosing down. Maybe I’ll share the porch cleanup in a “Fluff the Nest Friday”.
And once spring arrives, school moves down to the creek! My hubby remembered a wish of mine to have a picnic table by the creek, and he put one together down there a couple of Saturdays ago. We try to get in as much time in the woods as possible before the tics and snakes of summer make their dreaded appearances!
There’s nothing better than taking a break from school to roll up your jeans and catch crawfish! Country Girl used her sunglasses for scooping the little guys out of the sand before letting them go again. They are so interesting to watch!
