Happy Thursday, lovelies! And *happy* is the word that comes to mind when I think of strawberries, so there will be a lot of HAPPY in this post! I could use a little happy today, couldn’t you?
After bringing home a plethora of strawberries from the field last week, my kitchen has seen an explosion of strawberry pastries and jam! Basically, anything we’ve baked this past week has had strawberries in it! So here goes!!
Streusel-Topped Fresh Strawberry Pie
I’ve mentioned before that Sunday is our day of worship, rest, and good food! Our Sunday lunch almost always includes PIE. Last Sunday I made Streusel-Topped Fresh Strawberry Pie from The Recipe Rebel. You can find the full recipe on her website, but I’m just going to give you a quick rundown of the three basic steps: the crust, the filling, and the streusel topping.
I made the crust on Saturday, wrapped it in plastic wrap, and put it in the freezer to have ready for Sunday. I also went ahead and quartered the strawberries and placed them in the fridge. When we got home from church on Sunday, I placed the crust on the counter to thaw a little, preheated the oven, and mixed the strawberry filling with the strawberries I had precut.
I spread the strawberry filling in the crust and then mixed the streusel topping. I topped the strawberries with the crumbly topping and put the pie on a baking sheet before placing it in the oven. With the crust already made and the strawberries precut, this pie came together in a snap! The photo below is the pie just before going into the oven. It baked while we ate lunch.
And this is what came back out of the oven! Oh, it was bubbling and smelling so good!
I served it with a scoop of vanilla ice cream which melted right into the pie. My fave! It was a delightful combination of creamy, crunchy, and fruity.

Strawberry White Chocolate Scones
For Sunday morning breakfast, we always have muffins from a box mix. But for last Sunday I made Strawberry White Chocolate Scones.
The girls and I took a scone baking class at a tea room recently and learned how quickly you can put a batch of scones together, and how many different variations there are on a basic scone. I served the scones with the usual cream and lemon curd (LOVE lemon curd!), but also added a dab of strawberry jam! More on the jam in a minute.
I’m not going to share this recipe since I got it from a class and it belongs to the tea room. But if you’re local I would highly recommend you take the class! The instructor covered way more than just the recipe, but also the history and art of scone baking. If you’re interested, send me a message and I’ll give you the information.

From Field to Family to Friends! Strawberry Jam
One of the fun ways of sharing our strawberries with family and friends this year is in the form of strawberry jam! I found this Strawberry Jam recipe on Memory Makin’ Momma’s blog. First of all, if you haven’t visited her blog, go now! It’s adorable!! It’s full of wonderful ideas and inspiration for making everyday memories with your kiddos! I love it.
Second of all, the jam recipe is delicious and really easy to make!! In addition to offering the jam recipe, Jennifer at Memory Makin’ Momma also offers the cutest tags and ideas for gifting the jam! I ordered the strawberry tags that you see in these photos, plus some super cute Easter tags that I’ll share photos of next week.
Taking Jennifer’s advice, I found several of her strawberry-themed items to pack inside these cute strawberry crates (I found my crates on Amazon).
While waiting for my strawberry crates to come in the mail, I went ahead and gifted a couple of jars in these dollar buckets I had on hand.
I can’t decide which I like better, but the crates do allow more room for adding the other goodies, and I have so many ideas for the leftover crates (44 came in my order, ha!). My friend Kelli mentioned how cute it would be to use them for flower arrangements at a ladies luncheon. Love it!
