Today’s snapshots are all about food! I’m a food pic girl. If someone posts a photo of their lunch, cookie, or cup of coffee I immediately think, ‘Oh, that looks good! I hope they share the recipe!’ I also like to take pictures of my own plates of food (My kids and husband will attest to that!) as a way of sort of cataloging meal ideas.
Today I’m sharing pictures of the meals we ate this week. I challenged myself to make as many meals as I could with what I already had in the fridge, freezer, and pantry and make them as healthy and colorful as possible. If food pics aren’t your thing, I get it and it won’t hurt my feelings if want to skip this post and check back another day.
Saturday Night: Nacho Bar
Saturday nights are for games and nachos! We used to do charcuterie on Saturday nights but have recently moved that to Sunday nights to change things up a bit. I set out chips, taco meat, and all the toppings to let everyone build their own. For games, some in our family prefer board games and some prefer card games, so we alternate them each week.

Sunday Morning: Big Breakfast
We stayed in from church Sunday to finish our last day of quarantine, so we had a big breakfast after online worship, complete with eggs, grits, bacon, sausage, and whole wheat waffles. Not too colorful but very delicious!

Monday Night: Hubby’s Pick
My husband had requested a pork tenderloin, so I made that and served it with roasted potatoes and Brussels sprouts and a spinach salad with peaches, blackberries, goat cheese, toasted pecans, and a vinaigrette. Oh, how I love summer salads!

Tuesday Night: Freezer Leftovers
I pulled some brisket out of the freezer that Joel had smoked to perfection for July 4th and I added slaw and oven fries– a mixture of white potatoes and sweet potatoes because I only had a couple of each kind so I combined them.

Wednesday Night: Go Greek!
A couple of hours before dinner I put some frozen turkey meatballs in the crockpot with Greek vinaigrette on high. My family loves when I make these and it’s sooo easy. I added quinoa, hummus and pita, grapes, and cucumber salad.

Thursday Night: Off the Grill
I’ve been in a dinner slump lately and decided it’s time to try new recipes! So, I’m committed to trying one new recipe each week from a cookbook! (More on this coming soon because it involves another blog friend. Can’t wait to share!) This week I tried a recipe for Mahogany Chicken from a Williams Sanoma grilling cookbook that I’ll post the soon. It was so tasty and the glaze makes the prettiest dark crust! I had the glaze mixed and the chicken rinsed for my husband to put on the grill when he came home from work. He’s our grill master and always grills everything to perfection. I also had some corn on the cob prepped to add to the grill and I mixed up a fruit salad. My kids will eat bowls and bowls of fruit!

Friday Night: Pizza Night!
We always have pizza on Friday night (with Andy Griffith!) and since it was my son’s Gotcha Day anniversary I let him choose the pizza this week. He asked for Upside Down Pizza! This was not our healthiest meal of the week, but it’s so good, y’all! It’s almost like a casserole–you need a fork. I’ve been making this since my oldest was little. I usually make it with regular sized biscuits but this time I used Grands and we liked it a lot. I served it with Caesar salad, and of course we had popcorn later with our movie (Kung Fu Panda 3).
Ok, so there you go–a week of meals! Now it’s time to for me to plan next week’s menu. I hope you all have a great weekend with delicious food!
