Embracing the homeward call

Perfect Popcorn

Friday nights are what our family looks forward to all week! We don’t watch television during the week, so we catch up on Friday night. We’ve worked hard and we’re ready to crash and enjoy a relaxing evening.

We start with pizza and a few episodes of The Andy Griffith Show followed by our movie-of-the-week. My husband never could watch a movie without popcorn (even at home), and he now has us all trained to expect the same. He makes the popcorn every Friday night and it’s simply the best! Today I’m sharing his recipe. (You’ll see my hands in the photos because he was sick this particular night so he talked me through it.)

You’ll need 1 cup of popcorn kernels, a blob of coconut oil, 1/2-1 stick of butter, and salt (to taste).

Place a spoonful of coconut oil in the bottom of a large pot (enough to be 1/8-1/4 inch deep once melted) and melt on medium heat. In a separate bowl, melt the butter in the microwave.

While the oil is melting, place 3-4 kernels in the oil and put the lid on the pot.

Once the kernels start to pop, the oil is hot enough to add the rest of the kernels.

Add 1 cup of kernels to the hot coconut oil and place the lid back on the pot.

We like the clear lid so we can watch it fill the pot. We’re easily amused.

Once the popping slows down to just a couple of seconds between pops, take the pot off the heat and let it sit for another 30-40 seconds before removing the lid.

Pour the popcorn into a large bowl and stir in the melted butter and enough salt for your liking. Do this quickly before it cools too long so the flavors with stick in.

Enjoy a delicious bowl of freshly popped corn with your flick pick of the week! This stuff is so good! The coconut oil really makes it special.

Barney also looks forward to movie night because he gets to come inside and join the family. He LOVES popcorn! He perks up the minute he hears Joel open the pot drawer and place the pot on the stove. Then, during the movie, we all take turns tossing him a piece to catch in his mouth.

By the way, any guesses as to the movie we’re watching in the photo above? It’s one of our all-time family favorites and our rabbit is named after one of the characters (Buttercup!).

    Yum! We love popcorn with movie night, too. You are watching what my husband calls “possibly the greatest movie of all time,” Princess Bride! 🙂

      LOL, Whitney, you are correct and I totally agree with your husband! The Princess Bride was popular when my husband and I were teens and we have to watch it at least 3 times a year! Our kids love it too. So many great lines! 😂
