Embracing the homeward call

Pepperoni Pizza Rolls

We hosted a Christmas party for our Bible study group last night. Everyone brought their favorite finger foods and the assortment of savory goodies was outstanding, followed by yummy desserts and a s’mores bar! I’m still quite filled this morning, from both food and fellowship! We love our small group so much.

One of the party foods I prepared was Pepperoni Pizza Rolls. Think of it as the pizza version of a cinnamon roll.

Pepperoni Pizza Rolls

Ingredients:

1 frozen loaf bread dough, thawed but not risen

Pesto 

Shredded mozzarella 

Parmesan 

Pepperoni

Preheat your oven to 375 degrees. Roll the dough out into a rectangle, about 12-x-18” (doesn’t have to be exact).

Spread a layer of pesto in the dough (I use a little more now than is pictured here).

Sprinkle about 1 1/2 to 2 cups max of mozzarella, followed by some shakes of Parmesan. Now I love cheese, and have been known to use more than a recipe calls for, but here is where you don’t want to use too much because then the dough won’t roll well.

Distribute pepperoni slices on top of cheeses.

Start rolling on the long side, just a little at the time. This first roll is the tricky one, but once you get it going, it rolls nicely. Just be sure to tuck the pepps and cheeses in as you go. Some of those guys will try to get away!

Once it’s rolled and all snug as as bug, slice into 12 equal parts. I use a bread knife for this. These photos are from a few years ago, and I can say that with much practice, my technique is much improved and neater these days. 😊

Place the rolls in a well greased muffin tin, and at this point, you can wrap with foil and store the tin of unbaked pizza rolls in the fridge until ready to bake (I’ve made them a day ahead before) or bake them right away. Bake at 375 degrees until they are golden on top, and done (but not too done), in the middle.

Let them sit for just a few minutes and then run a knife along the sides of each to loosen. Serve with warm pizza sauce or marinara sauce.

So there you have it! All the good flavors of pizza, just wrapped in a different package for the holidays!

Speaking of packages, I should probably go finish my Christmas wrapping! Anyone else still wrapping gifts?!

    These look delicious! You should try cutting them with dental floss. I tried this for the first time with the cranberry orange rolls I made for our brunch tomorrow. It works like a charm! I called everyone into the kitchen to watch and they all wanted to do it!

      Yes, they are delicious! Unfortunately, the dental floss doesn’t cut through the pepperoni, but I’ve found the serrated bread knife can cut through everything. But you’re so right about how well dental floss works on cinnamon rolls! Like magic! Looking forward to our brunch tomorrow, and can not wait to eat your cranberry orange rolls!! I’m eating salads today so I’ll be hungry again tomorrow! 😄😋
