I was just looking through your blog and saw your sourdough bread pictures, again. If I recall correctly, you grind your own flour. Is that the flour you use in your sourdough bread? If so, I have questions! I am trying to make sourdough bread with freshly milled flour, and have been disappointed with the outcome. Mine don’t look anything like yours!
Hi, Cindy! For those decorative loaves that photograph so nicely, I use a mixture of unbleached white flour, bread flour, and my freshly milled wheat flour. I’m including a recipe below that works perfectly for those fun scoring techniques. I use this when I’m making bread for special occasions or when I’m teaching friends how to make sourdough. But for everyday bread, I just adjust the flour to include more OR all milled wheat. It will taste delicious but does not look as pretty! Thanks so much for reading and for the great question! The loaves you make are beautiful!
For the everyday bread, when you use all freshly milled flour, does it rise very high?
That’s the main thing I have struggled with.
It does not open up quite like it does with the white flour but it’s not totally flat either. Definitely denser but I adjust the amount of water and that helps. Whole wheat just seems “thirstier” to me and really soaks up the water so I change the ratio of water to flour and go more by the feel of the dough. I’m no expert whatsoever and I don’t have exact amounts written down but next time I play with it, I’ll record what I do and let you know! Have a happy Thanksgiving!!
