Embracing the homeward call

Easy Orzo Salad

Now that spring is officially here and summer is on its way, I’m starting to think about liter menus of grilled meats with sides of salad!

One of my favorite salads to pair up with grilled chicken, pork, or hamburgers is this super-easy Orzo Salad. It goes together so quickly and is very forgiving with any substitutions you might need to make.

Easy Orzo Salad 

Ingredients:

1 box orzo pasta 

1 *bottle Ken’s Steakhouse Greek dressing

1 container cherry or grape tomatoes, washed and halved

1 English cucumber, quartered lengthwise and then sliced 

1 **6-8 oz. container feta cheese 

Kalamata olives (a couple of handfuls will do) 

Cook the orzo according to the box directions. Drain and let the orzo cool for a few minutes. Toss orzo with half the bottle of dressing. Refrigerate for a while to cool completely. Once cooled, toss the orzo with the tomatoes, cucumber, olives, and feta, and finish off with as much dressing as you like. Cover and return to the fridge to keep chilled until serving time.

*I like a lot of dressing on mine so I usually use the whole of the bottle, but some might prefer less. **I also like a LOT of feta but didn’t have a full container when I made this batch so it was a little skimpier on the feta than I usually make it.

      Yay! Glad it’s a favorite for you too! I forgot to mention that sometimes I toss in chopped grilled chicken to make it a complete meal instead of a side. 😋
