St. Patty’s Day is tomorrow! We don’t go all out around here but I do try and cook a meal with an Irish theme. Here’s a quick meal idea for St. Patrick’s Day that I prepared last year and will do again this year. Since my daughter has an out-of-town game tomorrow night, I’m going to go ahead and serve this meal tonight.
Irish sausage, cabbage steaks, and potato stacks!
I didn’t take any fancy plating photos last year, but boy this meal was so tasty, and I can’t wait to eat it tonight!
I roast the sausage and cabbage steaks on one pan. For the cabbage, I slice 1 or 2 cabbage heads (depending on how many I’m serving) into 1″ slices and lay flat on a sheet pan that’s either greased with olive oil or lined with parchment paper. I brush olive oil onto each cabbage slice and sprinkle with salt, pepper, paprika, and garlic powder.
I get the Irish sausage at Aldi. It’s called “Original Irish Style Bangers” by Parkview. I put it on the sheet pan with the cabbage and roast both at 400-425 degrees until the sausage is browned and sizzling throughout and the cabbage is tender and browned, probably about 25 minutes but just watch them.
For the crispy potato stacks, wash and thinly slice a couple of pounds of Yukon gold potatoes. Mine were a little too thick in this photo so I plan to slice them thinner this time. Add the sliced potatoes into a large bowl with a mixture of 3 Tbsp. melted butter, 3 Tbsp. olive oil, some chopped rosemary and chopped parsley. Sprinkle somewhat generously with salt and a little pepper. Toss potatoes in the buttery mixture. Spray a muffin tin with cooking spray and stack the potato slices in the muffin tin starting with the larger slices on the bottom and finishing the tops with the smaller slices. Bake at 400-425 degrees until crispy and golden.

And the potatoes are so delicious!
All of this is great leftover too, so it makes enough for our family to eat two nights which is always a winner for Mom!

I have heard so much lately about cabbage steaks! I’m going to try those in place of the traditional cooking…. possibly sub sweet potatoes for the white potatoes only for health reasons….love white potatoes!!
