Anyone else getting tired of eating? I think one of the best and worst things about the holidays is the food! We love it, until it’s too much. After Christmas we’re ready for some healthier eats, but there’s still New Year’s to go. Crudité and Charcuterie boards are a healthier option that still looks and feels all fancy-schmancy for New Year’s!
A Crudités Board is typically veggies and dips only. I’ve been adding just a little fruit and nuts to ours lately, but the emphasis is still very much on the veggies.
Veggies can include just about any you like and are usually served raw, but for the firmer veggies such as green beans, asparagus, carrots, snap peas, etc., I blanch them in boiling for just about a minute.
Dips can include hummus, ranch, French onion, smoked salmon, vinaigrettes, etc. Pictured here are hummus and smoked salmon dip.
Charcuterie Boards seem to be all the rage lately. Our family has been enjoying these for years under the much more humble title of “snack tray”! Ha! Now we get to call it by a fancier name (when we can pronounce it), and a French one at that!
The focus with charcuterie is on the meats, which just delights my husband to no ends! I try to include 2 or 3 meats, 2 or 3 cheeses, cucumber, a little fruit (berries, pomegranate, slices of apple or pear), olives, marinated mushrooms, artichokes, nuts, crackers or pita wedges, and hummus.
The sky’s the limit, these days, with charcuterie boards! Dessert charcuterie boards are a lot of fun too, but this is a healthy(er) post so I’ll save that for another day.
