Delicious Muffin Mixes (with my own spin)

I’ve found a couple of new muffin mixes recently that my family loves! These are gluten free if that’s important to you but that’s not why we eat them. They’re delicious! That’s why.

The Bettergoods brand is Walmart’s knock-off of the more expensive healthy brands. It’s still about $5 per box but that’s $2-$3 cheaper than the name brands. And, did I mention, delicious!

I first tried the Banana Nut mix while helping my daughter and son-in-law after the birth of their son, that sweet baby 🩵. I made it in the loaf form for something sweet after our dinner and leftovers for their breakfast or midnight snacking. And 2 am snacking because newborn nights….poor mama!

You can make it as directed on the box but here’s the spin I give it: Substitute milk for the water, melted butter for the oil, and then add a teaspoon of vanilla and 1/4 cup of peanut powder for extra protein.

Have you tried peanut powder? My niece introduced me to it when she brought cupcakes to my house which she had made with the powder. I use it now in our baked goods, smoothies, and yogurt. It’s just as tasty and healthy as real peanut butter. I like the PB Fit Classic and I get the big jar from Walmart.

Yesterday I tried the Pancakes and Maple Syrup mix for our breakfast before church. Oh my! These were a huge hit as well. So moist and flavorful and perfect with our Sunday morning coffee. For these I again substituted milk for the water, melted butter for the oil, and added a teaspoon of vanilla (no peanut powder this time). I almost added some maple extract but I’m glad I didn’t because they had enough maple flavor already.

Have you tried the Bettergoods brand yet? These are definitely going on my list again. They taste even better than they look. Don’t forget the coffee!

On a totally unrelated note, I’m going to work on getting some kinks worked out of my blog this summer. You’ve probably noticed disappearing photos on old posts. I’m also inundated with spam comments and dealing with some glitches on the writing/editing side which makes putting together even a simple post take twice as long 😅. Hopefully these will be resolved soon!

    Yum! I’m reading your post as I savor my first cup of coffee! I’m not having a muffin, however, I’m enjoying a slice of banana bread a friend from church gave me! Hers, and your mother in law’s, are the best I have ever eaten! I can make the same recipe and it isn’t equal to theirs!

      I love homemade banana bread! I’ve never liked the mixes for banana bread/muffins because the banana flavor tastes artificial, but the Bettergoods mix doesn’t have that “fake banana” flavor. 🍌 😋
