Mexican Pizza {On the Lighter Side}

When I was a teenager, my favorite thing to order off Taco Bell's menu was a Mexican Pizza. To me this was the ultimate fast food treat! Two fried tortillas with a layer of refried beans in between, and then topped with taco meat, cheese, and taco sauce. Add to that my soft drink of choice in those days--Dr. Pepper--and oh, it was such a good meal! There have been a couple of times I've replicated this delicious Mexican treat at home, and while it's pretty easy to put together, it's not so healthy. So I've come up with a healthier recipe for Mexican Pizza! Rather than frying the tortillas, they are toasted, and I only use one tortilla instead of two which helps cut the carbs back a little. ... ‘Twas the Weekend Before Christmas….

'Twas the weekend before Christmas, and all through the house... every creature was stirring, and you better believe my table was set! With new dishes! Yay!  I've always wanted a set of Christmas dishes. You know the ones with either a Christmas tree or a snowy scene or holly encircling the border of the dish? So when my husband asked me what I wanted for Christmas this year, I decided on the dishes! He told me to pick them out and he would get them. I know, he's a keeper, right! Creamy Chicken Chili

This is about the easiest crockpot meal you can put together! I love a crockpot recipe that does not require any precooking, chopping, or other prep besides popping open some cans and a pack of meat and dropping it all in the pot. This one fits the bill! Creamy Chicken Chili Ingredients: 2 chicken breasts 1 can black beans, drained and rinsed 1 can corn, with liquid 1 can Rotel, with liquid 1 package ranch dressing mix 1 tsp cumin 1 Tbsp chili powder 1 tsp onion powder 1 8-oz light cream cheese Place the chicken in the bottom of the crockpot. Thanksgiving (Leftover) Soup

I hope you all enjoyed a wonderful Thanksgiving Day! If you have leftover turkey, I've got the recipe for your weekend! I just call this soup "Thanksgiving Soup" because it has all the flavors of Thanksgiving in a soup and makes excellent use of leftover turkey.   Thanksgiving Soup ***** -Cook 1 box long grain and wild rice according to box directions; set aside. -Heat 1 Tbsp. butter in a pan. -Saute the following ingredients until golden: 1 yellow onion, chopped 1 cup celery, chopped 1 cup carrot, chopped 1 cup sliced mushrooms (fresh are best, but I have a can in the pantry I'll be using this weekend) 1 tsp. dried basil  & 1 tsp. dried chopped rosemary -Add in 2 cups diced ... Mustard Baked Chicken

Today I have an easy recipe for a baked chicken that is quick enough for a weeknight, but special enough for Sunday lunch: Mustard Baked Chicken. Mustard Baked Chicken  This recipe is from Southern Living magazine, and I can’t even tell you how long I’ve had it. It’s an oldie but goodie. -1 (4 lb) whole chicken -1 Tbsp. paprika -1 1/2 tsp. dry mustard -1 tsp. salt -1 tsp. pepper -2 Tbsp. Worcestershire sauce -1 Tbsp. olive oil   Remove giblets and neck and rinse the chicken in cold water; pat dry. Creamy Orange Pecan Chicken

Happy Monday, friends! I tried a new chicken recipe yesterday and really liked how it turned out, so I thought I’d share it with you today. It’s Creamy Orange Pecan Chicken and it’s goooood!  I’d been saving this recipe for a Sunday meal because it’s a creamy dish and I try to avoid cooking creamy and buttery sauces during the week. I thought we might be pretty late eating lunch since I had not done anything with the chicken before church, but this recipe actually came together very easily once we got home.
