Healthy Fall Fare

Fall season really ignites my cravings for so many delicious foods! If I'm not careful, I can easily lose control. So, lately I've been experimenting with recipes that offer some much-anticipated flavors of fall, but with the health benefits my family needs going into cold and flu season! I love apples with pork chops and have made them in the oven, but wanted a healthy recipe that would work in the crockpot while we were at church, and then be ready to serve when we got home. Tropical Fruit Salad with Honey Ginger Syrup

I don't know about you but I just can't get enough fruit in the summer! I buy so much fresh fruit every week and we gobble it up. We eat it all year long but love the summer's seasonal fruits the most. Fruit is delicious enough without having to do anything fancy with it--I usually just wash and eat it on the spot--but occasionally I like to make it into a salad, tossed in a lite and healthy syrup. Easy Crudité and Charcuterie Boards for New Year’s Snacking

Anyone else getting tired of eating? I think one of the best and worst things about the holidays is the food! We love it, until it's too much. Hello, friends! It's September and that means APPLES!! I adore apples. Their sweetness, their colors, and their announcement of autumn's arrival all delight my soul! On my old blog, I used to host an Apple Week each September when I would post a new apple recipe each day for 5 days. One Week. Six Meals.

I love menu-planning! But sometimes I get into ruts and find it helpful to look at menus posted on other blogs and Instagram. Seeing what other women are cooking really inspires and motivates me to get in the kitchen. Last month I participated in the 31-day "Happy Homemaker Challenge" on Instagram, hosted by Whitney at Come Home for Comfort, and one of the photo prompts was called "On the Menu". Mexican Pizza {On the Lighter Side}

When I was a teenager, my favorite thing to order off Taco Bell's menu was a Mexican Pizza. To me this was the ultimate fast food treat! Two fried tortillas with a layer of refried beans in between, and then topped with taco meat, cheese, and taco sauce. Add to that my soft drink of choice in those days--Dr. Pepper--and oh, it was such a good meal! There have been a couple of times I've replicated this delicious Mexican treat at home, and while it's pretty easy to put together, it's not so healthy. So I've come up with a healthier recipe for Mexican Pizza! Rather than frying the tortillas, they are toasted, and I only use one tortilla instead of two which helps cut the carbs back a little. ...
