My son and I are in a field trip co-op this year which means the first Friday of each month we go some place interesting, educational, and fun with a bunch of great friends! The moms take turns arranging each field trip, and I had the months of September and October. September was supposed to be a trip to a museum and a historic home at our state capitol. Unfortunately, our tour was canceled by the museum a few days before due to a certain virus which shall remain nameless. For our October field trip I had planned a day at a farm and pumpkin patch down the road from our house, and it just happened to fall on the first day of October! There's no place we'd rather be on October 1st than ... Read more
Elegant Autumn Celebration Cake
A couple of weeks ago, my sister-in-law hosted a lovely birthday dinner for my mother-in-law. She and my other SIL prepared a delicious meal of family-favorite party foods and asked me to bring dessert. I asked the birthday girl what kind of cake she would like for her special day, but she said I could choose, which meant my husband and kids hinted at an Italian cream cake for several days after that, heehee. So, Italian cream cake it was! My sister-in-law said she would be decorating in a fall theme, so I wanted the cake to reflect her decor. As I mentioned a few months ago when I first posted the recipe for this cake, it really lends itself to so many different occasions with it's ... Read more

Healthy Fall Fare
Fall season really ignites my cravings for so many delicious foods! If I'm not careful, I can easily lose control. So, lately I've been experimenting with recipes that offer some much-anticipated flavors of fall, but with the health benefits my family needs going into cold and flu season! I love apples with pork chops and have made them in the oven, but wanted a healthy recipe that would work in the crockpot while we were at church, and then be ready to serve when we got home. I found several on the internet so I combined ideas of each of them. Crockpot Apple Pork Chops Ingredients: ~6 bone-in pork chops, rinsed, patted dry, and lightly salted ~4 large apples of any kind ... Read more
Happy Almost Fall!
Lately we have caught the fever--the fall fever! We are still more than a month away from the first day of fall and even then, here in the deep south, it'll be a while before those crisp, cool days make their appearance. So yesterday we had a "Let's-Pretend-It's-Fall" day! Nothing extravagant, just a few autumnal pleasures to tide us over for the rest of summer. We lit a deliciously-scented apple candle and whipped up some pumpkin muffins with butterscotch chips. I found some fall cupcake liners left from last year. I've been on a detox diet this summer so, sadly, no muffins for this mama. BUT, I did stir some pureed pumpkin and maple syrup into my steel cut oats and it was ... Read more
Happy Thanksgiving!
This fall, the kids and I have enjoyed lunch on the patio most days which almost always leads to shenanigans with the pets! One particular day, a couple of weeks ago, turned into a silly fall photo shoot with our fur babies, and we thought these photos would be a fun way to say "Happy Thanksgiving" today! Barney, our most exuberant pet, didn’t stick around too long. We were pleased to get him in at least one good photo. To our surprise, the cat and the bunny are pretty comfortable with each other, but, we’ve realized that the cat thinks the bunny is another cat, and the bunny thinks the cat is another bunny. And so now we call them "the sisters"! Happy Thanksgiving from our ... Read more
Snickerdoodle Pie and Pumpkin Ice Cream
I wrote this post last fall but didn't get it worked into my posting schedule. Hopefully I'm not too late for this year either. At my house, we are still very much enjoying the flavors of fall and I'm trying to squeeze in every last fall recipe and tradition before Thanksgiving. But, now that I think about it, I make this dessert all through the winter too! Snickerdoodle Pie is like a extra thick, extra soft snickerdoodle cookie baked in a pie shell and it's sooo delicious. Add a scoop of pumpkin ice cream and it's over-the-top good!! Snickerdoodle Pie (I do not even remember where this recipe came from. I searched the internet to find the original source but only found other ... Read more
Scarecrow Treats and a Fall Bible Lesson
The following post is one I put together last year but did not get worked into my posting schedule before the fall season was over. I've just about missed it for this fall too! Today I have couple of fall goodies that my son and I have been working on for his friends and cousins. I started doing these when my girls were younger so it’s been a lot of fun to repeat with my son. Candy scarecrows are so cute to pass out to the kiddos for a fall treat! You just need a box of raisins for the torso, Smarties for the legs, Tootsie Rolls for the arms, a round candy for the head, and some raffia for the neck straw. Use hot glue to attach candy pieces together in the shape of a scarecrow. Of ... Read more
