The Ways of Her Home

Embracing the homeward call

Autumn Apple Cookies ๐ŸŽ

September 19, 2019

Hello, dear friends! Well, I promised a happier post today, and a cookie is certainly a happy little thing!

If you followed my old blog, you might remember that I pretty much devoted every September to all the apple recipes I could squeeze into the month. Iโ€™m reposting one of my old favorites today, so for some of you this will be a repeat. My apologies. ๐ŸŽย โ˜บ๏ธ

Iโ€™ve been making these apple cookies cookies since I was a teenager, so itโ€™s an oooold recipe and a very memorable fall tradition for me. They are a delicious, almost cake-like cookie that makes your house smell amazing while baking!

AUTUMN APPLE COOKIESย

1 cup light brown sugar

1/2 cup shortening

1 egg, beaten

1 1/2 cups all-purpose flour

1/2 tsp baking soda

1/2 tsp salt

1 tsp cinnamon

1 tsp nutmeg

1/4 tsp allspice

1 cup chopped apple

Cream the sugar and shortening until light. Add the beaten egg. Mix the dry ingredients in a separate bowl and then add into the creamed mixture. Stir in the apples. Scoop balls of dough with a cookie scoop onto a baking sheet lined with parchment paper. Bake at 375 degrees for 10-15 minutes. Cool on racks and drizzle with brown sugar glaze.

*****

BROWNED BUTTER GLAZEย

6 Tbsp butter

1/2 tsp vanilla

2 cups powdered sugar

3 to 4 Tbsp milkย

Brown the butter in a heavy saucepan over medium heat; remove from heat. Whisk in the powdered sugar and vanilla. Whisk in the milk, a little at a time, until it reaches desired consistency. Sometimes I keep it thick to frost it onto the cookie as an icing, and other times I thin it a little more to drizzle it onto the cookie. Bakerโ€™s choice!ย

(This next photo is one I almost forgot I had, but Iโ€™ve added it in to show what they look like with a thicker frostingโ€”also delicious!)

Iโ€™m so excited that autumn is almost here!! Baking is one of my favorite parts of the season!

So whatโ€™s your favorite fall cookie?

Haha! I love it too! ๐Ÿ˜‹ Itโ€™s amazing how that browning takes the butter flavor up a notch.

Mmmmm, that does sound good! And I just bought some new maple-flavored coffee creamer that would make the perfect cup of coffee to go with apple cookies! โ˜•๏ธ ๐ŸŽ ๐Ÿช
