Hello, friends! It’s September and that means APPLES!! I adore apples. Their sweetness, their colors, and their announcement of autumn’s arrival all delight my soul! On my old blog, I used to host an Apple Week each September when I would post a new apple recipe each day for 5 days. So today I’m bringing back Apple Week, starting with the easiest (and probably the healthiest) apple recipe I’ve ever made!
Last week I was looking for a dessert that needed to meet three requirements: 1) fall flavors 2) healthy 3) refreshing (because it’s still so hot outside!). I looked through my recipes and found this granita that covered the criteria. The crazy thing is that I’ve had this recipe in my files for many years with good intentions of trying it, but I just never got around to it until now. I had printed it from the Food Network website and the date on my printed copy said 2009! So, after 11 years of sitting in my files, it was about time to give it a try. I’m so glad I did! It was delicious and two of my kids have asked me to make it again so I’ll be doing that this week for an afternoon snack. It would make a good breakfast as well.
Applesauce Granita with Maple Yogurt
Granita:
2 cups unsweetened applesauce
1 teaspoon lemon juice
In a shallow 8-inch square pan, stir the applesauce and lemon juice together and spread the mixture evenly in the pan. Place in the freezer for at least an hour. Prepare sauce in the meantime.
Sauce:
1/2 cup plain fat free yogurt (not Greek)
1 Tbsp. maple syrup
1/2 tsp. ground cinnamon
In a bowl, combine the yogurt, maple syrup, and cinnamon. Chill the sauce until ready to serve.
Remove the granita from the freezer and scrape the surface with a fork to fluff it. Spoon into bowls and top with a happy dollop or two of that sweet maple yogurt sauce!
