Fresh Apple Cake
A moist, gooey apple cake with crusty corners and a decadent glaze poured on top!
- 4 cups apples, peeled and chopped
- 2 cups sugar
- 2 cups flour
- 1 1/2 tsp. baking soda
- 2 tsp. cinnamon
- 1 tsp. salt
- 2 eggs
- 3/4 cup oil
- 2 tsp. vanilla
- 1 cup chopped pecans, optional
- 1 cup sugar
- 1/2 cup butter
- 1/2 cup heavy cream
- 1 tsp. vanilla
Preheat the oven to 350 degrees. In a large bowl, stir together the apples and 2 cups sugar. Add the flour, soda, salt, and cinnamon and stir well. In a separate bowl, beat the eggs, oil, and vanilla. Stir the egg mixture into the apple mixture, blending until thoroughly moistened. Stir in the pecans, if using. Pour the batter into a greased 9x13 inch pan. Bake for about 50 minutes or until the cake springs back when lightly pressed. For the glaze: In a saucepan, combine the 1 cup sugar, 1/2 cup butter, 1/2 cup heavy cream, and 1 tsp. vanilla. Bring to a boil over med-high heat and cook for 3 minutes. Pout over the apple cake, spread it all over and let it soak in!
